I live at 8000 ft altitude in CO... I have such a hard time with pies. I decided to give it one last try this summer after getting some apples at our local apple fest. I found your recipe and only made one alteration to the filling recipe per a friend (mix the apples, etc. and let it sit for a couple hours to soften up a bit). It turned out AMAZING!! I was so pleased. I've got the crust recipe all made up to make some pumpkin pies for our late Thanksgiving now!! Thanks Again :) I just wanted to thank you for this awesome recipe!!
