GG’s Persimmon Bread Recipe

So I’ve been experimenting in the high altitude adaptation of an old recipe for persimmon bread. I finally got it to the point where I am happy with it and so tested it out at Moose Lodge 2085 and with the neighbors.

The original recipe called for 3 cups of sugar (yuck) so if you want something more like a sweet cake bread you can experiment with increasing that (or using apple sauce) but I find it is satisfying enough with the flavor and sweetness of the persimmons and less sugar.

Also I put in more persimmon pulp (original was one cup) and made it with the skins.

Persimmon Bread Ingredients

  • 1 1/2 cup persimmon pulp
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 teaspoons salt
  • 2/3 cup water
  • 3 cups all-purpose unbleached flour
  • 1 cup chopped walnuts (or whatever you have in the cupboard)

Prep Instructions

  • Preheat the oven to 350 degrees F.
  • Grease one large glass pan or several smaller loaf pans. (Fill level about 1/2 to 2/3 up the pan sides.)

Mix the persimmon pulp and baking soda and set aside to stand for 5 minutes to thicken.

In another bowl, combine sugar, oil, eggs, cinnamon, nutmeg, and salt. Blend until smooth.

Gradually add in persimmon pulp then add water alternately with flour. (I used my Kitchen Aid mixer–makes this easy even though I don’t have the flat beater or grinder attachments, I do pretty fine.)

Fold in nuts.

Fill up your pans and bake for 60 minutes in a preheated oven, or until a toothpick inserted comes out clean.

Cool in pan for about 10 minutes before putting it on a wire rack to cool completely…if you can wait that long.

SnowBlower Spill

I joined some neighbors down at Moose Lodge 2085 late yesterday afternoon.

Cliff and Terry showed up and all of you that have been giving him a shout out about his birthday party now need to tell him to settle down.

Well, maybe you don’t have to since the neighbors confiscated his new snowblower…but let me give you a little background on this issue.

As everyone around these parts knows, Cliff just celebrated his 89th birthday a little while back and I was a bit worried when he got this new fangled “sit and ride” snow blower.

You know snow and ice can be bad around these parts and earlier in the week I was out walking the streets (Does that sound bad?) and can say that it was not a good choice and tough conditions for anyone.

The wind made it colder than what the thermometer was reading and there was black ice all around. And if that wasn’t bad enough, ice sheets existed everywhere else under the snow.

Snoop Sister Deb and a few other neighbors have tended to grab Cliff’s snowblower to take over clearing his steep driveway each winter. (I know you have seen those pictures as I often post them here because it is BIG, breaking news.)

Anyway, I’ve done it and so have many of the local folks. We don’t mind helping neighbors and were a bit concerned for his safety as that driveway is a, err…bear.

Now around these parts mountain folk are made from tough material and so don’t tend to slow down like they are supposed to.

You know, the mind is willing and the body is, uh, slowing down.

Anyway, Cliff was out on the ice testing his new snowblower, which would not climb back up the hill.

He got out to check it out and took a spill.

Neighbors were teasing him last night about napping out on the driveway.

NOTHING is sacred around these parts. Plus, he was a notable person this week because he even was on the scanner!

But the real notoriety, as folks around these parts know, is that he got a mention in the Flyer again.

Heh, heh, heh.

The good news is that he seems okay, a little scraped up and bruised–but he was doing a fine job of munching down turkey, ham and potatoes last night.

Anyway, remember your older neighbors this winter and if you are able bodied–keep them from doing stupid things like falling down on the ice because they are doing something they ought not to be doing at 89 years of age!

Moose Lodge 2085
Holidays at Moose Lodge 2085 are always festive and time to catch up with people and neighbors you might not have seen for a while.

Snoop Sister Deb escorted me down to the lodge for food and social interaction since I’ve been locked in the house for a few days.

Although we left early, at least 40 people showed up for the hosted dinner.

Members of Moose Lodge 2085 and Women of the Moose 359 put their time and energy into preparing a Thanksgiving Feast for Fawnskin residents and their families (as well as members) each year and I always enjoy it.

GG’s favorite dishes this year?

Hmm, hard to say but I really liked Wayne’s green beans and Bernie’s sweet potato pie–in fact it is the first time I’ve been able to grab a piece of that pie in all the years I’ve lived over here because it is so popular.

I doubt she will share the recipe but I’ll have to ask her.

Christmas Tree Lighting
The Annual Fawnskin Christmas Tree lighting will take place at Fire Station will be on December 4, 2010. Santa and Ms.Claus arrive at Fire Station 96 at 4:30pm to hand out presents with the tree lighting afterwards.

I am happy to report that the activities for kids will begin at 2:00pm and there will be food and other festivities prior to the arrival of of the big SC–I’ll post the schedule on Monday.
