GG’s Coconut Chocolate Cupcakes | High Altitude Baking

GG’s Coconut Chocolate Cupcakes were something that I cooked up for a special party this weekend and they are so incredibly yummy that I had to share the recipe with you. High Altitude Cooking is kind of a therapy for me.

This recipe makes 12 cupcakes and works for me at 7,000 feet but you know the barometer and other factors can mess up your efforts–just keep an eye out in case you have to make any other adjustments.

Preheat your oven to 350 degrees F while you prep.

Coconut Chocolate Cupcake Batter
1 Cup Unbleached Flour
1/2 Cup Powdered Coconut Milk (or 4 TBSP liquid)
1/4 TSP Baking Powder
1/4 TSP Salt
1 1/4 stick Butter (10 TBSP)
1.5 Ounces Cream Cheese (just use a little less than 1/4 Cup)
1/2 Tsp Vanilla
3/4 Tsp Coconut Extract
2 Eggs
1 TBSP Milk
1 Cup Chocolate Chips

Optional Addtions: Coconut Flakes and Dark Cocoa Powder

Mix all dry ingredients together in one bowl.

In mixer, beat butter and cream cheese until smooth.

Gradually beat in the sugar, followed by vanilla and coconut.

Beat in dry ingredients. Once it begins to stiffen, add eggs gradually (I beat them first) as you continue to mix.

Add Milk and continue to beat. Finally, add chocolate chips. If desired, add 1/4 C or more coconut flakes.

Line muffin pan with cupcake liners (because it is sticky) and fill with 1/4 cup batter.

Bake for 25-30 minutes. (I find 25-28 works for me.)

Coconut Cupcake Frosting
1/2 stick butter (4 TBSP) OR 1/4 C Butter + 1/4 Cream Cheese
1/4 Cup Powdered Coconut Milk
1/8 TSP Salt
1/4 TSP Vanilla
1/4 TSP Coconut Extract
2-3 Cups of Powdered Sugar
2 TBSP Milk

Cream butter and cream cheese. Add Vanilla, Coconut Extract, and Salt. Continue to mix and gradually add in powdered sugar about 1/2 a cup at a time.

Once mixed, add Milk 1 TBSP at a time. Don’t chill.

Once cupcakes are out of the oven. Allow to cool on a baking rack. Then frost.

Sprinkle with coconut flakes and dark cocoa.

Serve with the hot beverage of your choice–and try not to eat them all at once!

    Oh my Goddess….They were Sensational…I’m a coconutaholic….so when GG brought them to a September Birthdays celebration last night, I was drooling at how awesome they were.
