Butternut Squash Soup | High Altitude Cooking

GG loves cooking and I’ve been working at adapting recipes to my new regime and high altitude. So here are two versions of a butternut squash soup recipe.

Butternut Squash Soup – High Altitude

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1-2 yellow onions chopped
  • 1 (15 ounce) can pumpkin puree
  • 1/2 butternut squash, peeled and cut up into chunks
  • Chicken stock or broth (3 cups or more)
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 small pint half and half

Directions
Melt and mix butter and oil in a pot and add the onions. cook over low to medium heat until translucent.
Add the butternut squash, pumpkin puree, chicken stock, salt, and pepper.
Cover and simmer for about 30 minutes or until chunks of squash are tender.
Gently blend or run through a food mill.
Return to the pot and add the half and half.
Garnish with sunflower seeds or pumpkin seeds. (GG likes roasted)

  • 1 teaspoon of Thyme (or to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1 can of coconut milk

Directions
Melt and mix butter and oil in a pot and add the onions. cook over low to medium heat until translucent.
Add the butternut squash, pumpkin puree, chicken stock, salt, thyme and pepper.
Cover and simmer for about 30 minutes or until chunks of squash are tender.
Gently blend or run through a food mill.
Return to the pot and add the coconut milk.
Garnish with sunflower seeds or pumpkin seeds. (GG likes roasted)

    Hi GG,
    I havent recieved my Fire Fee tax bill and I need the address of where to send the payment so its not late and charged intrest. I have all my paperwork ready to mail off to the 3 addresses for protest but i need the actual billing address..
